When we first met Jim and Pauline at the Every Chef Needs a Farmer, Every Farmer Needs a Chef conference, we knew right away that their handcrafted birch syrup was something we needed to get our hands on. While this relationship is in early days, we know the Fowler’s syrup will be a mainstay on our menu for years to come, bringing flavours not otherwise had to Acorn dishes, while also being a key ingredient in several Acorn Market items including our popular Toaster Ready Waffles. 

The process of bringing this syrup to life is also incredibly eco-friendly, beginning with using wood waste from local small mills to boil the sap. Kispiox Creations also use the heat from processing the birch sap to warm up their greenhouse.  

A hand-crafted, local, non-machinery made syrup is hard to come by, and we’re thrilled to have Jim and Pauline’s unique product be a part of the Acorn family.
