BC Garlic

Behind the best garlic ever known to The Acorn is a man named Abdul. Abdul is truly one of a kind. With his organic farm being the largest in Abbotsford, he grows the most varieties of garlic in the province. This accomplishment is incredibly impressive as growing garlic organically comes with its share of challenges (due to organisms who like to attack it for its sweetness). Abdul aims to bring garlic back to its roots, having people try different varieties of this ingredient is important to any dish, while also finding innovative ways to preserve it.

Abdul’s BC Garlic is essential to The Acorn’s dishes as its flavour is unmatched. Did you know that most restaurants source their garlic from out-of-country providers, where it then becomes processed time and time again, losing flavour along the way before reaching your plate? BC Garlic has allowed The Acorn to set itself apart from this norm, using real garlic from people who care deeply about the community, and locally sourced ingredients.

The Acorn was first graced with BC Garlic through meeting Abdul at the Every Chef Needs a Farmer, Every Farmer Needs a Chef conference, where Chef Devon Latte was immediately struck with his offering of peeled garlic, a tool that would become powerful in all our vegetarian cooking. While garlic often operates in the background flavours of a dish, it is not to be underestimated.  Approaching the 3 year anniversary of our work with Abdul, we are incredibly grateful for his ability to grow the highest quality garlic in BC.
